If you have interest in live action shows and have no problem with it being in German) I can recommend at least Elspe. (Haven't got the chance to visit the other).

The main character spent the better part of his life slaughtering hundreds of people to get good enough to kill 1 man, then ends the season with him pissing mad ready to kill everyone. Second season starts with him on a farm years later where he's a devout pacifist with no explanation given as to why and he's talking about building a peaceful
I'm with you man.its great character development and I knew when season 2 came around that a lot of chods would give trash opinions cause there is no violence like season one. It's why it never got an adaptation till recently.
