A pressure cooker helps a lot. The meat is still pretty lean but it's more tender. Braising for a few hours works too. I see some people slice it into steaks and cook it rare which is supposed to be good.

Makes sense. The good cuts of meat tend to be the ones that don't get as much use in the animal, as opposed to the one muscle that literally never stops being in constant motion for the entirely of the animals life.

This architecture actually improves the function of the heart. Rather than squeezing directly inwards (like popping bubble wrap) each heart beat is technically a twist and squeeze like wringing out a towel. It allows better ejection of blood overall from the "strong" left side aiding the weaker right side.
