Quiche Lorraine is so spotty for me. Sometimes its perfect. Other times it doesn't set until I 'force it' by almost doubling the cooking time. My guess is too much/too high moisture spinach. I've thought about wilting it first then pressing moisture out. ??

I can't stand spinach & never use it, so can't offer advice :-( But reducing the moisture sounds like a good idea

I used a leek & pachetta, instead of a shallot & bacon. And cheated with Pillsbury pre-made crust ;-)
