I liked the Crash Test Dummies Parody. Amish Paradise is also great. The bit in the video with "Jebidiah feeds the chickens" and it's a guy chasing a chicken with a slice of pizza. Just cracked up laughing at the thought. I sincerely hope that never stops being funny to me.

I've lived Weird Al music for a long time, but the one that really really hooked me was White & Nerdy. As a nerdy computer programmer, I identify with almost every syllable of lyric in that song.
