Disco fries, or Diner Fries, are a completely different animal.
The fries are cooked, the gravy is poured over, and then the cheese goes on top, and it's put under a broiler.

I often wonder why poutine isn't more popular here. Wisconsin, of all places; close to the border, plenty of cheese, and consistently drunk, but I only saw it in a handful of places. Chicago, same. And it just seems tailor made for Americans.

Yeah, it seems like a pretty obvious win, yet practically nobody carries it. Maybe if we started asking restaurant owners about it, it'd spread. But I almost never eat out, so, they rightly wouldn't pay me much attention.
