The only telltale sighns he could be looking for was the feet sticking out on the sides, and that you can find those fossils in the area.

if you mean "how do you know what's crab and what's stone?" the fossil is a different material - look at the colour and texture.

It's often in the colour, search "concretion", after looking at the cliff, loose concretions on a beach are different to other boulders.
