new fern sprouts that haven't unfolded yet. Has to be Ostritch Fern, and young sprouts so they are typically only available in the spring

Fucking delicious, as long as they're freshly picked. Don't boil them. Don't steam them. Quick sear with a little olive oil and butter, and a dash of salt and pepper. Lemon wedge on the side. They're delicate, so don't leave them on the heat for too long.
