Enjoy watching candy being made,

The first thing you see here, is food color being stirred into molten sugar.
The sugar is very hot and quickly brings the water in the color to a boil. He stirs it in to boil all the water out.
Water makes candy very sticky!

Next, he adds citric acid. That's the white powder.
Citric acid is needed to bring out the fruity flavor of the candy.
Without the acid, it would only taste like sugar.

Molten sugar is a thick liquid.

The parts of the sugar that is in direct contact with the table, will cool down fast.
As you can see, he can even touch it without thermal gloves.
All the rest of the sugar is still a very hot liquid. Therefor, he moves it around the cool it down evenly.

As the sugar cools down, it's viscosity changes into that of molten glass:
It still behaves like a liquid, although it gets thicker and thicker.
It will stay "soft" right up until it is fully hardened.
And then it does not re-melt.

One type of candy is the so-called "drops". They're being rolled like this.

Bonus fact:
This machine must stay cold. When it gets warm, the candy will stick to it.
You either need to cool it down continuously, or use it in intervals and let it cool down between.

When hot sugar meets cold metal, it's surface immediately hardens and therefor doesn't stick to the metal.
If the metal is warm, the sugar doesn't harden and therefor it sticks.

I got addicted to dill pickle sunflower seeds for a while. Pickle flavored candy seems like a stretch. I'll have to try it when I'm there
