I’ve made potato & leek soup before.

Tonight i tried Sweet potato & leek soup.

2q chicken stock (or veg if you want)
1 pint heavy cream (or coconut milk)
3 leeks
4-5 medium (soda can sized) sweet potatoes
1 small or half of a large onion (i used yellow)
4 cloves fresh garlic (minced)
Fresh microplaned / ground ginger (about a cubic inch of solid rhizome)
Turmeric, cumin, fresh thyme, salt, pepper (no measurements, listen to your heart, but go easy on the cumin or your soup will smell like feet.

Peel/prep your veggies, REALLY wash your leeks (So. Much. Dirt. It can scrape fancy knife surfaces, use one you don’t care about) https://www.youtube.com/watch?v=CzC3qngNEcA

dice sweet potatoes

Cut leeks & onion into thin slices
mash/mince/grind/grate/ ginger and garlic
Strip the thyme leaves off their stems, toss the stems

In a big covered pot, with some butter or oil brought to MEDIUM heat, add:

Leeks
Onion
Garlic
Ginger
Thyme
Cumin
Turmeric

And stir regularly for 5-6 minutes

Add your sweet potatoes and stir them around for a few minutes, add in the 2q of stock, and bring to a light boil. (Tiny bubbles)

Turn the heat down to low, cover and let simmer 20 minutes. Stir occasionally.

Turn off the heat, use a stick/immersion blender, or pour the soup into a blender (in batches) and blend until MOSTLY smooth.

Stir in the cream, add salt & pepper to taste.

And it’s done. Turned out good. It was my dinner.

one said it was “ridiculously good”

I’m having a second bowl with some crushed up country style salad croutons on top and it’s even better

U can pretty much swap out the leaks or even keep them but do roasted butternut squash soup. Add a lil brown sugar and some milk very gooood

Cinnamon and nutmeg would swing it over to an almost pumpkin pie soup.

It’s a versatile base that is probably very forgiving.

Its a pretty versatile soup tbh, you can do more onion and celery and its a savoury soup. Chunks of ham are fantastic with it. Ive been meaning to make it cause its getting to that time of the year
