What's the point of the straws if you just add MORE crap after it to mess up the flow, THEN combine all those 'from the straw' flows into ONE big mixed flow?

It reduces turbulence by forcing the water to flow in the same direction rather than spiraling through the larger opening. Not perfectly, but improved.

I bought a kitchen faucet that has a laminar flow. When its on you can barely hear it. Most people go "oh you dont have good water pressure here huh?" then when they put something under it, water goes everywhere

For an even better effect, add in coffee stirring straws between the spaces in the regular straws. Then take some sort of metal sheet (aluminum foil can work, but something thicker is better) and cut a hole in the middle to the diameter in your outlet. Finally, deburr the hole by sanding it down using incrementingly finer sand paper while also maintaining as perfect of a circle as you can. The cleaner the hole, the more perfect laminar flow you’ll get.

instead of deburring the hole, use the top of a screwtop bottle (e.g. water bottle, 2L pop bottle, whatever). It's as smooth as you need on the inside!

The more fiddly and weird your project, the cooler it is when you're done!

no, it's nothing like an aerator at all. One increases turbulence and mixes air; the other reduces turbulence and doesn't add air.

I've seen better laminar flows however as its still moving

It's very hard to do that with water in an outdoor environment and hand held. To get it to look still it's easier with a viscous fluid, which is why you often see it with oil or syrup.
