The key here seems to be making all cuts parallel to the sides of that square. Notice he always cuts in a straight line towards himself, never at an angle.
I don't think that matters as the important part is where the cut is started, not where it ends up. I think he just cuts straight towards himself because it's easier than cutting at an odd angle where you're more likely to slip.
