Ironically that might be a better way to visually explain the frequency and waveform of a tuning fork than simply watching one vibrate with your naked eyes.

It requires a bit of understanding of how digital photography sensors work to be able to perhaps calculate the frequency based on visual footage, but I could definitely see an educational lab experiment designed around the interaction of these phenomena.

It isn't the sensor, its how the sensor is read out. On a rolling shutter the sensor is read line by line. On a global shutter the entire sensor is read at once. All points on the sensor are constantly exposed. Most of the explanation on that page is wrong and confuses the sensor for the imaging system.
