Scallops with Warm Corn Poblano Salsa

Scallops:

Dusted in Blackened seasoning:

2:1:1:1:0.5 Ratio of:
Smoked Paprika
Dried Oregano
Dried Thyme
Dried Basil
Dried Marjoram

+Salt, pepper, MSG to taste

Seared in infused oil:

Ina skillet with cold neutral oil add finely sliced:
Ginger, lemongrass, shallot, garlic, red chili

Bring to a gentle fry until all are crisp and oil is infused. Strain + season crispy garnish

Use infused oil to sear the scallops

Corn Poblano Salsa:
2 corn, 2 poblano, 1 red bell pepper, roasted, peeled, diced
1/4 onion, finely diced
Sake
Butter, to finish
Blackened seasoning, to taste

Cilantro, to finish
