"David" is more interesting than accurate. The hands are different sizes, his head is disproportionately large, and his legs and genitals are abnormally small. But that's a feature! The distance from the viewer's eyes to each of the parts imparts a foreshortening. Every part was sized so that from a normal man's eyes, to how much higher each part was when the statue was on its original pedestal, everything would scale so its appearance was exactly in proportion as an ideal man.

I saw it first as an older teen and couldn't help but cry at seeing the intensity of emotion depicted in that sculpture. It's seared in my memory half a century later. When I saw it over 20 years ago, I was told that nazis cut the rope during the war because they couldn’t believe it was one piece. And it was right next to my favorite Veil of Christ. Fascinating little church especially the basement

Yeah I can imagine multi axis cnc machines with end mills doing work like that but it's hard to wrap my head around the idea of someone doing that with chisels by hand
