my question is why did gollem not age 500 years after he lost the ring? Bilbo aged after he gave up the ring, and he only had it for 60 years, and aged in the 20 years after, but gollem didn't age in the 80 years after he lost it.
IIRC Bilbo aging is more of a film thing than a book thing. In the books Bilbo doesn't suddenly get older until the ring is actually destroyed, not just when he gives it up.
So presumably gollum would also have suddenly aged a ton and possibly died when the ring was destroyed, assuming it was destroyed in a way that hadn't killed him.
