Basically, "Turkey" was a generic term for "exotic" and that got applied to the bird where that was the common parlance. Obviously, that wasn't the case everywhere, so you end up with myriad terms for it, all kind of pointing to the idea of an "exciting, far away origin" but never quite landing on the same (or right) one.
